Testing the Clever Cleaver with Arnon Kartmazov

This knife spots a dual grind which leaves the heel heavier (unspecified) which allows Murray to cut :

-wire
-pvc pipe
-dowel
-frozen pig feet

I never cut up pigs feet, but I would guess the boes are decent, heavier than most fowel, and small game.

The front portion then appears to do very well on light slicing work. It seems to show clearly the kind of balance in performance you can get with a dual grind. Though I do think that Carter exaggerates at times on how difficult it is to cut some of the material such as PVC pipe.

I am not sure how thick that pvc pipe was but I know when i pushed cut that piece of schedule 40 in my one vid it was no joke, but I cant imagine it being hard to chop at all.

PVC Properties - Vinidex
Hardness 80 Shore D Durometer, Brinell 15, Rockwell R 114, cf: PE Shore D 60
Brinell 15 says 74.82kgf or 164.95lbf (733.73Newtons)
which is like above balsa but below white pine janaka hardness

I saw this a week or so ago via his instagram.

Made me want to buy one...the dual grind seems pretty sweet, and then just the material selection, nice high carbon tough steel (1084) and plain jane hickory handle appeals to me. But well, I didn't buy one...I just don't do that much cooking.

While for whatever reason something I can't put my finger on about Carter does rub me the wrong way, I really do wish I had the funds to pick up one of his blades, either one of these or an FS1. I just really appreciate his videos clearly demoing what his blades can do.

I had the same reaction. If you asked me just to talk about Carter as a person awhile back it would have likely been mostly negative. However after I talked to him directly it all changed. He doesn't come off on camera at all like he is in person (direct). Just call up his shop and talk to him. I think you will walk away with a very different impression of him.

Not everyone represents well on camera.

That's good to know Cliff, and I totally believe it. I wish I did have a reason to call him up and talk, but his work really is out of my range right now.

It's also one of the reasons I did try to specify what it is that rubs me the wrong way...he's obviously selling his product (and not even in a negative manner...he's just doing something very specific), and that's not to be mistaken with the person he is.

Interesting insight on Carter's personality, Cliff.

I don't like that we were all whipped into a frenzy about a Q&A Carter was going to have with this forum... and it never happened. I don't know if I blame Carter, or Cliff, or both... but I'm still salty about it grinning smiley

Does it make a difference if you dont look at him only listen?
He seems to have the sun in his eyes and is squinting and furrowing his eyebrows ... like you would if you were angry ... or for some people had a headache/tired/thinking

Nice looking light cleaver. Reminds me of the Amalzan Kitchen knife. Or a pointy version of my very thinly ground Calton vegetable cleaver, but with a thick heel. I’d like to see Joe’s take on this design.

Mr. Carter seems to present well on camera to me, especially given this is essentially home video, not something professionally produced. Sometimes how someone is perceived is a matter of if they remind you of someone +\- in your life.

I’ve never done a comparison or even chopped PVC, but my intuition is that a true hardwood dowel would be hardest on the edge vs pvc. As far as the trotter chop, don’t know how much was bone vs frozen meat, but that is not something I’d do with a vegetable cleaver.

After the hard chopping the pig feet at the end of the video You could see
2 portions of the edge to reflect light when he put the knife down on the board.

I like the grind tho I would expect more convexing for better food release
but if definitely performs well.
