So, it seems that edge stability (microstructure of the steel) is one of the main problems with razors. Dulling comes mainly from microchipping, not from slow wear.<br />
<br />
Based on the above, I think to myself, would a PM version of AEB-L or 14C28N at very high hardness make an edge even more stable, durable and tougher? If not, how can science create steels with considerable more edge stability? (without sacrificing hardness and carbide content).]]></description>

Mora has a series of videos directed toward wood carving.  Yes, the videos are promoting Mora knives.  Still, there is some good information provided. <br />

            <description><![CDATA[ Oxtools is a machinist.  In this video around minute 42:40 he shows a filing jig he made from something similar he saw knifemakers using.  <br />
It looks like a setup that could be easily modified for jig sharpening to give someone that likes jig sharpening whatever angle they wanted. <br />

The data doesn&#039;t support that at all. For 20+ years, myself (and others) have been talking about the need for BASIC procedures in comparisons, how is this still not well understood, this is first year science :<br />
<br />
-all measurements have error (uncertainty)<br />
-if you don&#039;t have an uncertainty you don&#039;t even have a measurement<br />
<br />
The knife is measured for sharpness one time in :<br />
<br />
-two different places<br />
-two different pieces of cord<br />
-two different clips<br />
<br />
and since they are not exactly the same number, concludes the knife is &quot;sharper&quot; . <br />
<br />
-knives do not have the same sharpness along the edge<br />
-all cord varies (even ISO grades)<br />
-all measurements have uncertainties (even NSERC labs)<br />
<br />
Minimal procedure :<br />
<br />
-make 3-5 measure of sharpness<br />
-calculate an average and standard deviation<br />
<br />
Then when you compare, see if the standard deviations over lap, if they do, then the numbers are not different.<br />
<br />
(there are better ways, but this is the most BASIC)]]></description>

This is one of the better comparison videos I have seen :<br />
<br />
-he notes the limits of his comparison<br />
-the comparison really doesn&#039;t favor the benchstones even though he sells them<br />
<br />
In some detail, it takes him 50% longer to sharpen a knife vs the machine, and it was his first time using the machine so he would only get faster, and he has a lot of experience sharpening on benchstones. More surprising there isn&#039;t a difference in sharpness from the machine to a benchstone of similar grit.<br />
<br />
An interesting question would be :<br />
<br />
-is there any benefit to edge retention from the benchstones<br />
-is there any difference to the lifetime of the knife<br />
-does the sharpener change the geometry of the knife if you use it significantly (I suspect it would in the heel)]]></description>

I remember sometime ago probably in the early 2000&#039;s, there was an article in a knife magazine, that talked about the new type of knife person:<br />
the user/collector.  They would buy a knife, use and carry it until they got a new knife.  Then they would take the knife they were carrying and put it away in there collection.  Or, they would buy two of the same knife, one a plain blade with no serrations or blade coatings, for collecting, and one for use, that had a blade coating and partial serrations.  <br />
<br />
I think that you could add a few other types of knife people also, sharpeners, modifiers, testers and makers.  Some of these will overlap for one person.]]></description>

Ok, so we have a dozen different knives.  Only one had some pocket clip wear, one is a dedicated tape cutter, and none of them look like they have been sharpened or used.  With that many knives, and light work, you most likely are not going to see any wear, but it makes me question what the definition of using a knife is.  What is sharp or dull for this users knives?  How long is one knife used in rotation before another knife replaces it?]]></description>

Depends how you look at the math, and how you like to use knives to determine if there is a benefit. if you are bushcrafting you prob want a finer edge for woodwork anyway, but...<br />
160% sounds great if you don&#039;t actually look at the numbers.<br />
5min to do 600grit for 60ft, and 35min to do 8k for 98ft. <br />
that&#039;s 12ft of work per minute of sharpening for 600grit, vs 2.8ft of work per min of sharpening of 8k. now if you were paying an employee to work, which would you think is the most beneficial? if you had an employee whose job involved 8hrs of knife work a day of this nature, do you want 12ft per min or 2.8ft per min?<br />
apart from anything, it&#039;s unlikely during a day or an outing that each resharpening is going to required 5min on 600grit. typically it would be 30seconds to restore the edge at that level in the field on a pocket stone or small steel hone.. these are soft steels easy to restore.<br />
if you are out for a multi day trip, then that 8k prob wont survive a weekend of work if it can only handle 98ft cutting. so you are going to need to resharpen anyway. in the middle of the dark in the forest, do you want 35min or 5 min to get an edge back.</div></blockquote>

This really exemplifies what I think the modern trend we are seeing is. people are looking at 1 side of the gain, without looking at the total cost of that gain. <br />

All these people promoting certain steels. why are they not asking, that over the last 80 years these steels have been available why all the factories that rely on high performance cuts of meat and food, and getting maximum quality, per minute have not taken on all these steels that are claimed to have better edge longevity. <br />

we are talking about multi million dollar industry..<br />

a butchers knife in vicnox is $20-$30, forget custom makers.. forget small-time operators like Benchmade and spyderco. if vicnox wanted to produce s110v, m390, k390 or any of these for butchers knives, and built the machines and tooling to do it, then we would be talking about $60 knives, not $400 knives producing a few thousand a day of them if they wanted to. <br />

for one meat plant operator, or tuna fish processor, over the course of one shift can be processing $50,000 of meat.. weigh that up in lost income sharpening knives.. everything about the industry when you look at it, is about increasing productivity, longevity, and profitability.. <br />
if it was a thing. it would have been done long ago. <br />

it would be great if anyone could find research on this. i am pretty sure that the big companies definitely do research on this stuff. <br />
i don&#039;t mean the companies selling all sorts of wild steel choices to the minority of the world that collects knives and hobby nerds out over stuff like us. i mean the industry supplying knives to the commercial knife using sector.<br />

some things to consider about the arguments you might hear could be things like.<br />

ok, so lets consider this.. a knife is so elite, so good, that it needs a special handling to use. maybe because of that special handling, the handler can only do 20% of the work of the guy ramming through his stuff rolling and denting and repairing his knife on the fly.<br />

time... matters.  the Olympic runner that crosses the line first but tears a tendon from the effort wins, not the elite athlete with a precise stride that holds back to ensure they don&#039;t get an injury. <br />
<br />
knives can be fun hobbies. they can be relaxation tools where you sit back and smell the roses.. but as a tool.. tools are about productivity. the best tool is going to be the most productive, factoring in all things use, care, maintenance.. tools are also disposable.<br />
<br />
if one tool is $400, and will last 10(x) and another is $20 and lasts 1(x) but does the same level of work until expiry, then for $400 the cheap one can be had 20 times making it 20(x) for the same money. so ideally the $400 one is best if you can replace components for longevity and long term &quot;cheaper&quot; operation over time. <br />
in most cases of tooling, you pay for the best because you work out that the losses incurred by continually needing to replace the cheaper ones add up over time to show the cheaper one is more costly investment. <br />
all this is ignored to the knife nerd community in general. Im a sucker for it too sometimes. (impinda)<br />

Thanx much for the kind words. Gail and I have always worked hard for the company. As you know, &quot;the harder you work, the luckier you get&quot;.<br />

We live on the high country in Colorado, about 10,000&#039;. We have a few acres so getting out is not a problem. I can test indoors, opening mail and packages, breaking down boxes (we burn wood for heat) food prep, etc. Outdoors cutting branches, daily maintenance.<br />
<br />
A lot of testing is carrying the model for convenience. Cutting easy and hard materials gives me insight into grip and control. Constant cutting gives me a close look at edges; geometry, edge retention, chipping, dulling, etc.<br />
<br />
I try not to have big meals. Always working on the weight. Only eat fish and vegetables, no meat or chicken. Stopped eating meat in &#039;68, added fish in &#039;79.<br />
<br />
As mentioned, I&#039;m pretty busy even though we&#039;re semi-retired. Hobbies: knives and edges, Time with family, I&#039;m a shooter, sailing, Geo-politics, designing, inventing, sports cars and driving. Gave up the &quot;Crotch Rockets&quot; when I turned 65. Now I&#039;m almost 78.<br />
